Environmental Monitoring as a Food Safety Strategy

Food safety is paramount to consumer confidence and business success. In the age of 24/7 news coverage, foodborne illness outbreaks fall quickly under the spotlight of public awareness. Prevention is the key. If an organism is found in the environment there is a 70% chance of it getting into the food. Thorough factory cleaning that is effective in reducing the risks of Microbial & allergen cross- contamination is a critical component of any GMP program. Effective environmental monitoring programs, as part of an overall food safety system, can help to extend product shelf life, reduce risk of recalls, reduce costs, increase customer satisfaction, and increase revenue. By shifting the emphasis from finished product testing to proactive prevention, identification and elimination of sources of food contamination can occur before they create a serious and costly problem. This presentation will review the Importance of Environmental monitoring, right sampling methods of the environment, Rapid Hygiene monitoring systems, Detection technologies of Microbiology contamination and Allergens.
