Dr Rekha Singhal, currently heading the Department of Food Engineering and Technology at Institute of Chemical Technology, Mumbai. She has obtained her Bachelors, masters and doctoral degrees in Food Technology from University of Mumbai in 1984, 1986 and 1990, respectively. She has began her career as a lecturer in food technology since 1991, and then as reader and professor of food technology. She has 25 years of teaching and research experience at undergraduate, postgraduate and doctoral levels. Dr Singhal has successfully supervised 81 M.Tech and 26 doctoral candidates so far. Her research areas include carbohydrate chemistry and technology (modified starches, microencapsulation of sensitive food components using conventional and newer wall materials, enzyme-polysaccharide interactions, biofuels from agro-industrial waste and many others), fermentative production and downstream processing of biomolecules, chemistry and technology of traditional Indian foods, food quality assurance, supercritical carbon dioxide extraction of sensitive compounds of significance to food industry. Dr Rekha is the Investigator and co-investigator of projects sponsored by AICTE, DBT and UGC as well as several industrial houses. She has been the Editor, Journal of Food Science and Technology, 2009-2012. She has delivered invited lectures at various places. Dr Rekha collaborated with scientists from BARC, Mumbai; Forest Research Institute, Dehradun; and National Botanical Research Institute, Lucknow; Aalto Universoty, Finland, Illinois Institute of Technology, Chicago on projects of common interest. She is the Member of Editorial board in various governing bodies.
