Jens Sloth's Biography



Jens Sloth, Senior Scientist, Technical University of Denmark

Dr. Jens J. Sloth is a senior scientist in analytical chemistry at the National Food Institute of the Technical University in Denmark (DTU Food). He has more than 15 years experience in analytical chemistry with emphasis on trace element analysis and speciation analysis using coupled techniques like HPLC/GC-ICPMS. He got his master degree in analytical chemistry at the Technical University of Denmark in 1995 and in 2005 he received the phd degree at the University of Bergen, Norway for his thesis “Speciation analysis of arsenic – Development of selective methodologies for the assessment of seafood safety”. He is currently involved in several activities on development and standardization of methods for speciation analysis in the field of food and feed control with EU.

Arsenic can be found in various chemical forms in foodstuffs with different toxicity. The presentation provides an overview of arsenic chemistry in food and methods of analysis to detect the different compounds in relation to food safety assessment.
